Rhubarb Infused Gin
Growing up on the prairies, rhubarb was always one of those garden plants that was a welcomed summer staple. Much like zucchini, rhubarb has a reputation for its versatility. If you can dream up the recipe, rhubarb will make the perfect ingredient! Over the years I’ve made the rhubarb muffins, rhubarb coffee cake, rhubarb slushes, and yes I have perfected the rhubarb crisp. But this summer I was on the lookout for something completely different and special. So I decided to turn my kitchen into a little rhubarb distillery! In so doing, I’ve been making rhubarb infused gin. The recipe was simple enough; what’s tough is waiting the three weeks until it’s ready for consumption!! If I only knew it was going to be a hit I’d get a few more batches going so I’d have a steady supply on hand. But wasting gin would keep me up at night so I’ll have to wait and see how we it turns out first! Rhubarb has a very tart flavour and recipes often require a lot of sugar. I really cut back on the sugar for two reasons: to keep it healthier and I also am not fond of sweet drinks. So now I’m waiting patiently to see how it turns out so I can tweak my next batch if need be. Regardless, I can’t wait for that first sip; it will be fun to try and the rose colored tint from the rhubarb will make it a most beautiful summer evening drink on the patio with friends. Be sure to book early your rhubarb gin tasting so you don’t miss out. I can’t promise you how amazing the cocktail will taste but I can guarantee the company will make up for it!
