Rhubarb Gin Infusion Update
Here it comes… I have a confession to make! The rhubarb infused gin that was to go through the infusion process for 21 days only made it to 11!! Temptation got the best of me and once I started there was no turning back!! As some good friends advised, “Rules are meant to be broken”. I surprised myself!! It was all I had hoped for – a refreshing, natural rhubarb tasting, gloriously pink, summertime drink. You’ll be happy to know that whatever gin rhubarb I had left over in the batch did not go to waste. I used it to make gin infused muffins which were also a hit but in my opinion a waste of all the gin the rhubarb had absorbed. I’m going to rethink that as I don’t want to just burn off the alcohol in the baking process. Anyways, I know many of you wanted to try it but do not fear because the good news is that I’ve already started a few more batches and I promise to keep the supply above the demand😉!! I’m also experimenting with each new batch. If you are a fan of ginger, I’ve added fresh ginger this time. I’ve also discovered that it’s easy to make and even easier to enjoy!!!
