Fabulous Farrow
It may come as a surprise to you being a mother of three hearty appetite, growing like weeds, teenage boys but I rarely shop at Costco. When I do, I have made it a tradition to try something new that I wouldn’t otherwise buy; after all isn’t any visit to Costco all about buying a bunch of things you didn’t plan on buying?!!!? My last trip was no exception. As I made my way up and down the aisles I came across a bag of something called, “farrow” amongst the other choices of rices, pastas, and grains. Growing up on a farm, it reminded me a lot of the look of unhusked wheat. Thinking of how my mother had always fancied introducing my palette to a wide variety of foods I was rather surprised I had never heard of farrow before. I was immediately curious and discovered that it is an Italian born grain dating back to Ancient Rome. While it tastes akin to brown rice it has a touch of nuttiness and I’ve found it to be a bit chewier. The health benefits are superb; nutrient dense, a great source of fibre, protein, and is loaded with vitamins. It’s also very versatile as it can be used in soups, salads, side dishes, or mixed with vegetables. So far I have cooked farrow in my rice cooker and then used it as a main ingredient in salads. It is so delicious that I cannot make enough of it for my family – it magically disappears!! If I’ve sparked your curiosity a bit to give it a try and begin enjoying this new healthy grain, here is my favourite recipe with farrow so far.
Mediterranean Salad Recipe:
2 cups cooked farrow (I do mine in my rice cooker),
1/2 red onion chopped,
1/2 red pepper diced,
1/2 cucumber diced,
1/2 cup pitted black olives,
1/2 cup crumbled feta cheese,
1/2 cup fresh parsley finely chopped,
3 Tbsp extra virgin oil,
Juice of one lemon,
Salt and pepper to taste.
Mix well all the ingredients and hide it from your family if you plan on having some yourself!!?
